DIRECTOR OF FOOD AND BEVERAGE

POSITION SUMMARY:

This position is responsible for the administration, operation, and direct management of the Food and Beverage department.

ESSENTIAL QUALIFICATIONS, EXPERIENCE, EDUCATION AND TRAINING

  • Seven to ten years of relevant experience such as Director of Food & Beverage, Manager of Food & Beverage, Executive Chef, Restaurant Manager, Banquet and Convention Manager, Sous Chef, etc. in a large and fast-paced hospitality environment.
  • 4-year degree in a related field or equivalent work experience preferred.
  • Must have and maintain current ServSafe certification, or must obtain current certification within 30-days of hire.
  • Training and development skills are a must have.
  • Must have or be able to obtain a valid State Gaming License and Responsible Vendor card.
  • Must demonstrate the ability to obtain and maintain any licenses, permits, insurance, or indemnifications necessary for the completion of the duties and responsibilities associated with this position, or for the protection of the Company’s assets, employees, or patrons.

JOB KNOWLEDGE, SKILLS AND ABILITIES

  • Ability to create menus and wine lists. Knowledge of point of sale computer, bar inventory control systems, and all kitchen equipment.
  • Management abilities demonstrated in managing the Food and Beverage departments’ operational effectiveness.
  • Public relations and customer service skills.
  • Knowledge of applicable OSHA, ABC, Sanitation and other Health regulations.
  • Oral and written communication skills.
  • Maintaining interpersonal working relationships among all personnel.
  • Willingness to assume overall responsibility relative to the performance of the Food and Beverage treatment.

ESSENTIAL JOB DUTIES AND RESPONSIBILITIES

  • Responsible for providing strategic direction, planning, and executing all aspects of Food & Beverage operations to include the Buffet, Steakhouse, Grill, Banquets & Catering, Casino Beverage, and all other food and beverage related activities.
  • Effectively manage cost of goods sold at designated budgeted levels. This includes assistance with establishing and monitoring pricing levels, developing and maintaining menus, defining specifications, assistance with vendor and product sourcing, managing waste, and minimizing product loss.
  • Responsible for all aspects of staffing in the department to include oversight of hiring, training, and motivating team members. Oversight of scheduling, labor efficiency, and productivity.
  • Ensures proper head count and employee coverage in all operational departments. Monitors FTEs, actual head count, and overtime. Establishes customer service standards to ensure guests have a positive experience.
  • Responsible for planning, controlling, communicating and implementing procedures and processes for the overall efficient operations of the department. Look for opportunities to reduce waste, increase productivity, and/or improve the guest/team member experience.
  • Develop and administer operating and capital budgets. Monitor periodic operational reports to meet revenue, expense, labor, and/or profitability goals. Implement appropriate corrective actions as needed.
  • Ensure the safety and security of employees and customers. Manages programs and processes to control and reduce loss time injuries. Ensure safety and security of all patrons and employees. Ensure that food and beverage products are properly and safely stored, rotated, handled, and prepared. Ensure that food & beverage exceed cleanliness standards.
  • Delegate job tasks and responsibilities effectively and appropriately within the department.
  • Proactively evaluates and solves problems. Answers and resolves guest’s complaints and/or concerns in a timely manner.
  • Accurately account for all purchases and inventory.
  • Meets with directors and managers as necessary. Be accessible and available to team members
  • Provide various oral and written reports to property and corporate management.
  • Achieve departmental and individual performance goals and duties in a timely manner.
  • Demonstrate ability to understand, communicate and comply with Company Policies, Processes, and Procedures.
  • Other duties as assigned.

ORGANIZATIONAL RELATIONSHIPS

  • The position is responsible to the General Manager for the successful performance of assigned duties and is responsible for the supervision and performance of the Food and Beverage department.

PHYSICAL DEMANDS AND WORK ENVIRONMENT

  • Physical demands associated with the position including, but not limited to, extensive standing, walking, and occasional lifting.
    Office environment, restaurant, kitchen, and bars.
    Casino environment exposed to smoke, low level and bright lights, steam and noise. May include boat and/or floating barge. High rise hotel and atrium.
    Travel by car with occasional travel by plane.

ESSENTIAL QUALIFICATIONS, EXPERIENCE, EDUCATION, AND TRAINING

  • High School Diploma or GED equivalent required.
  • Two (2) years administration experience is preferred.
  • Working knowledge of Microsoft computer software with strong knowledge of Excel and VI systems.
  • Possess outstanding Customer Service skills and patience with the ability to meet and greet customers and guests in a professional manner.
  • Ability to train and evaluate personnel in all areas of responsibility.
  • Regular attendance with flexibility in scheduling while maintaining an upbeat attitude.
  • Must have or be able to obtain a valid State Gaming License and Responsible Vendor card.
